Preparation:
1. A fillet wash up, dry, cut on pieces, slightly beat off from the centre to edges, rub with a mix

Add a chicken broth, a cherry (having left there are some berries for an ornament), the lemon dried peel cut by a large shaving, sugar, vinegar, a thyme and cook about 5 minutes occasionally stirring slowly. Sauce should decrease in volume twice and thicken.
3. Take out a dried peel, add in sauce salt and spices, a butter cut by flakes, mix. Cool a little, crush in a blender. Submit with a garnish from rice, decorate with berries.
